Gad, or Juniper ash, is made by carefully burning branches from the juniper tree, then sifting the fine ash for in traditional cooking. It's mostly common added to roasted blue corn meal for dishes like mush, pancakes, or cookies enhancing both the flavor and the signature deep blue color. Naturally high in calcium and other trace minerals, Gad has long been valued as part of traditional Diné diets.
